Pimento mousse with pesto and stracciatella — a Georgian fusion with an Italian flair;
Beef carpaccio with baje walnut sauce — a light and modern take on a Georgian classic;
Braised beef cheeks with roasted potatoes and tarragon sauce — our interpretation of the traditional chakapuli;
Dessert “Pelamushi 2.0” — a familiar Georgian treat reimagined.
